Executive Chef Portuense
The Ethan Allen Hotel is pleased to offer the culinary expertise of Executive Chef Claudio Portuense. Chef Portuense oversees the culinary operations at Fairfields Restaurant, Fairfields Lounge, as well as the Conference Center and Grand Ballroom at the Ethan Allen Hotel. Chef Portuense joined our team in 1998 as a Sous Chef. During his apprenticeship at the Ethan Allen Hotel, Chef Portuense was also undertaking his formal training at the Culinary Institute of America in Hyde Park, NY.
Throughout his extensive years Chef Portuense has been with the Ethan Allen Hotel, his passion for creating culinary delights has greatly contributed to Ethan Allen Hotel’s legendary reputation for providing exceptional cuisine, as well as supporting Ethan Allen Hotel’s commitment to providing value and superior service. Chef Portuense’s imaginative approach to using fresh, seasonal and local ingredients from Connecticut’s coast and countryside, results in an authentic “New England Experience” – a truly magnificent dining journey.
